When we browse through our old menu cards from the beginning of the 90s, there is a clear line of development when it comes to the ambitions set for our cuisine. After starting out with a sandwich shelf positioned at the counter, we took the first big step when we set up a kitchen in the basement.
As much as possible we use organic and biodynamic ingredients. In our hunt for quality we have been inspired from the very best of various European cafe cultures: the traditional French cafe, the cake houses found in Vienna and Budapest, the Italian coffee menus and, of course, the culinary inspiration from the Spanish tapas and the Greek yogurts.
